K&K's Chewy Choc Chip Cookies Serves 11
1 Cup blanched almond flour
1/2 tsp baking soda
2 Tbsp tapioca starch
1/4 cup buckwheat flour
1/4 cup coconut sugar or (Brown Monkfruit sweetener)
1/4 tsp salt
1/3 cup vegan choc chips
1 1/2 tsp pure vanilla extract
1/3 cup smooth natural peanut butter
1/4 cup unsweetened apple sauce or (pure maple syrup)
Preheat your oven to 350 degrees and line a tray with parchment paper
In a large bowl combine blanched almond flour, baking soda, tapioca starch, buckwheat flour, coconut sugar, and salt then mix well
In a separate smaller bowl, combine egg, vanilla extract, peanut butter, and unsweetened apple sauce then whisk together well
Pour the wet mixture into the larger bowl and fold it into the dry ingredients
Add Vegan choc chips
Your batter should be on the sticky side which will create nice tender cookies! We love to scoop the batter out as is, but you may also add a little more flour and roll each cookie in, then press down onto the baking sheet
Bake in the oven for 10 minutes and enjoy warm or allow to cool!
